Our flavouring trends for 2023!

Through our "Flavoring Trends for 2023" report, the PROVA team invites you to explore 10 brown notes, currently on the rise, that will delight your taste buds... This trend report joins our megatrends for this new year, summarized in the "10 trends for a flavor-rich 2023" report. 

This year, beverage-inspired notes will be in the spotlight, with a particular focus on tea and coffee, and the many flavor combinations that accompany them. 

ZOOM on coffee : 

Traditional and regional coffee recipes appeal to consumers not only in their country of origin, but also in other countries where they may be considered "exotic". For example, while Irish Coffee is a beverage recipe typical of Ireland, it has become a popular taste in many parts of the world. The same is true of the British Dirty Chai Latte or the Australian Flat White. As Korean culture tends to become more influential, South Korean Café Meringue could become increasingly popular in the years to come. Some coffee recipes are less well known worldwide, but could be a good source of inspiration for innovation, such as Nepal's Mustang coffee, Vietnam's Ca Phe Trung, as well as South Africa's Kula or Argentina's Lagrima. Some of these regional coffees are also seasonal recipes, such as the American Pumpkin Spice Latte, particularly popular during the Halloween season. 

ZOOM on tea : 

As with coffee, tea is available in many forms around the world, particularly in Asia, as illustrated by Japanese Matcha Tea, Chinese Green Tea, Thai Tea in Southeast Asia and Chai Tea in India. In Europe, Earl Grey tea - a combination of black tea and bergamot - is also a must in the world of hot drinks.
