A symbol of rebirth, spring brings with it a host of new seasonal products every year, especially during Easter, a key time for confectionery. In this report, we present the flavors that are characteristic of this time of year, as well as product innovations that have caught our eye.

SPRING IN JAPAN
Every region celebrates spring in its own way. But if there's one country where spring is particularly celebrated, it's Japan, through the custom of "Hanami". The word "Hanami", which can be translated as "looking at the blossoms", refers to the springtime custom of appreciating the beauty of cherry blossoms: for the Japanese, it's an opportunity to gather under the blossoming cherry trees to contemplate their beauty and spend a convivial moment.
SPRING IN HOLLAND
Holland is famous for being the land of tulips, which bloom between mid-March and mid-May. An estimated 7 million bulbs bloom during this period, transforming the country into a colorful ocean. Spring and tulips are also a source of inspiration for new seasonal products, such as chocolate tulips.
EASTER IN FRANCE
France has 17 million Easter chocolate-buying households, and sales of Easter chocolates reached €282 million in 2022. According to analysts, the 2023 Easter season should see a return to growth, after previous editions impacted by various crises. According to figures published by FERRERO in 2021, "egg hunting" accounts for 39% of Easter chocolate consumption on the French market, with the rest of the budget split between sharing (37%), trophies (14%) and self-consumption (10%).
EASTER IN THE USA
American consumers are attaching increasing importance to Easter, as evidenced by the 40% increase in spending over the past decade. Expected spending for the 2023 Easter campaign in the USA is expected to reach $24 billion, across all categories. Indeed, this spending is not limited to the confectionery category, but also includes spending on festive meals, gifts, clothing, decorations, flowers and greeting cards.
